Discover the history of BO&MIE bakery and patisserie, a unique blend of traditional artisanal baking and innovation, in the heart of Paris. OUR HISTORY BO&MIE is first of all the story of a meeting on the benches of the School of Gastronomy FERRANDI : that of Magali and Jean-François – the two of us then students in the Bakery course for adults undergoing retraining – we decided to unite our efforts to create the Bakery that resembles us. Magali Szekula Former lawyer at the Hospitals of Paris, decided in 2015 to change her life to start baking and pastry. She then enrolled at the Ecole Ferrandi where she obtained her CAP Pâtisserie after having completed several internships in major Parisian houses including the Grande Épicerie de Paris. Bakery specialist, Magali will sign the entire range of breads at the opening of the 1st BO&MIE! Jean-Francois Bandet After having co-created the combat sports brand Venum (official equipment supplier of the UFC), Jean-François wanted to embark on a new challenge in keeping with his passion for gastronomy: launching his own brand of Bakery and Pastry 100% artisanal in France then abroad around strong values: 100% homemade, a creative, qualitative and accessible offer to the greatest number! 2017 - Opening of our first bakery in Paris Opening of BO&MIE Turbigo on November 9, 2017 at 18 Rue de Turbigo in the 2nd arrondissement of Paris with a team of 5 employees: 1 pastry chef, 1 baker, 1 cook and 2 sales advisers with a 100% homemade offer of breads, pastries, pastries and snacks. 2019 - Opening of our second bakery in Paris Opening of BO&MIE Saint Martin in July 2019 at 359 rue Saint Martin (75003) in place of a former textile wholesaler. Beyond our passion for artisan baking, we are aware of the environmental, social and economic challenges we face today. That's why we strive to adopt responsible practices in all aspects of our business. Our commitment to a sustainable future translates into concrete actions in several key areas: ECO-RESPONSIBILITY AS DNA Seasonal products Our menu adapts to the rhythm of the four seasons : our pastries and salty dishes , for example, give pride of place to seasonal products, allowing us to combine taste quality and responsible food. In particular, this allows us to favor local supplies and reduce our ecological footprint. Naturalness Our products are healthy, without the use of additives or improvers. For bread in particular, we use everything simply our own natural sourdough and a long fermentation which acts as a natural preservative. The liquid or hard leaven allows a better preservation of the breads and more flavorful aromas. Vegetarian offer BO&MIE is committed to reducing its ecological footprint by offering a predominantly vegetarian menu, with 72% of its overall menu being meat, egg and milk-free. In collaboration with new players in the food industry, BO&MIE is actively working towards expanding its vegan options, including substitutes for eggs, butter, and various dairy products. Recycling 80% of the plastic used is recycled. We have a zero plastic goal in 2025. BO&MIE did not wait until 2023 to eradicate disposable tableware from its points of sale. Since our opening in 2017, we have been offering reusable tableware on site (cups, glasses, plates and cutlery). Valuation of unsold items It may happen at the end of the day that certain products do not find takers. Rather than wasting them, we have chosen to give them a second chance by donating them to associations committed to the fight against food insecurity. We also work with TOOGOODTOGO which allows our customers to collect unsold items at the end of the day at reduced prices. QUALITY RAW MATERIALS A local "Label Rouge" flour Flour is the heart of baking, and we recognize its importance by sourcing the finest ingredients. To reduce our carbon footprint and support the local economy, we have chosen to work with a local mill, Les Moulins de Chars. We are able to use wheat grown in the Val d'Oise, while also ensuring our farmers are paid a fair wage. Also, our flour has been awarded the Label Rouge designation. Sustainable agriculture Through our rigorous commitment to sustainable sourcing, we ensure that all raw materials, including our cocoa beans sourced from Cacao Barry, meet our high standards for ethical and environmental responsibility. By supporting the Cocoa Horizons Foundation through our purchase of chocolate, we are contributing to the improvement of cocoa farmers' lives, the eradication of child labor, and our goal of having a positive impact on deforestation and our carbon footprint by 2025. French raw materials Our fruits and vegetables are delivered every day by our early market Rungis directly to our four Parisians stores. The vast majority of our fruit purees are made from 100% French fruit and supplied by our partners Boiron and Andros. OUR SOCIAL RESPONSIBILITY Our team At BO&MIE, we pride ourselves on being a family business with 150 employees, all of whom are highly valued and respected. In addition to our commitment to our team members, we also prioritize their working conditions and respect for their time. All our products are prepared in an artisanal way in our lab and bakery and baked every day to ensure their freshness and quality. Do you offer gluten-free products? Selection of dishes and menus The products presented on the BO&MIE menu are subject to the stocks available in the restaurant in whose jurisdiction the place of delivery is located. If stocks are exhausted, your BO&MIE or Clickeat restaurant may, at its sole discretion, either contact you by telephone at the number you indicated when you registered to suggest that you opt for another product, or reduce the invoice amount of the price of the unavailable product. This reduction may also take the form of a credit note to be applied to a future order. Confirmation of the order Once the selection of products and menus has been made, you are asked to validate your basket and then indicate the method of payment chosen. The BO&MIE Website accepts payments by Carte Bleue VISA and Master Card through Stripe, a secure internet payment service company, as well as restaurant vouchers. When this operation is carried out, your order is recorded automatically and becomes firm and final, in accordance with the legal provisions excluding the exercise of the right of withdrawal in the distance selling of perishable products. Electronic signature The “ok” button associated with the authentication and non-repudiation click constitute an electronic signature. This electronic signature has a value between the parties like a handwritten signature. Any purchase order signed by the Customer via the "click" constitutes an irrevocable acceptance which can only be called into question in the cases strictly provided for in this contract. The information relating to the order is the subject of an electronic mail (e-mail) of confirmation. This confirmation email serves as proof of the order placed between the Customer and BO&MIE. Our range of breads is highly selective and all our breads are made from natural levean RESPECT FOR TRADITION After having developed their aromas and nutritional qualities under the effect of a slow fermentation of 24 hours, our breads are kneaded, shaped and baked in our kitchens throughout the day. We do not use any sort of "premix" and choose our local flour (Moulins de Chars), without additives, most of which being certified with the LABEL Rouge and / or certified from organic farming. THE LEAVEN We decided to use leaven to allow the fermentation of our entire range of bread. This natural fermentation process is closely linked to the history of bread making: in fact, this very process of mixing water and regularly refreshed flour was THE first method to be used for making bread. While this fermentation process is more complex than using baking yeast, the use of a homemade leaven allows for rich and tasty flavors, better conservation of bread and a better digestion, due to its interaction with gluten.
